I also checked with the food staff and found out that due to the nature of chicken, there is a phenomenon called ``pinking,'' in which the chicken turns red even when it is heated, and this is a possibility in this case. Meat contains a pigmented protein called myoglobin, which generally denatures when heated, becomes oxidized, and turns brown, but it may contain heat-resistant myoglobin, which does not denature even after heating. . Heat-resistant myoglobin has an anti-oxidation effect on iron and maintains the reduced state of iron, which may cause the meat to take on a red color.
